This time mixed yokan scraps and roasted walnut in the middle of the fermentation but beforehand is better. 2nd fermentation around 3-4 hours in bowl. Rest in fridge one night. Take out from the bowl and return to room temperature around 30-60 mins. Put potato starch and coupe. Bake 250 degree celsius for 15 mins. #bread #makanai
