Note for the next baking.  -Soft flour 30g
-Hard flour 270g
-Rice koji 1g
-Water 185g
-Rice starter 105g
-Pink salt 6g  Yokan scraps,
Walnuts,  1st fermentation around 6-8 hours.
Punching in the middle.
This time mixed yokan scraps and roasted walnut in the middle of the fermentation but beforehand is better.  2nd fermentation around 3-4 hours in bowl.
Rest in fridge one night.  Take out from the bowl and return to room temperature around 30-60 mins.
Put potato starch and coupe.
Bake 250 degree celsius for 15 mins.  #bread #makanai
